The chia plant (Salvia hispanica) is native to Latin America and was cultivated by the Aztecs in the pre-Columbian times for its seeds as an energy source and valued for its nutritional properties. It is high in dietary fibre, protein, calcium, magnezium and other vitamins and minerals. Due to their satiating properties, chia seeds increase, in a natural way, the volume of food without adding unnecessary calories. They are highly water-receptive (can gradually supply water to
the body over a period of time) and are sometimes called „runners food“, suitable for long-lasting
physical exercise.

The chia seeds can be ground to a soft powder or soaked in water, making a gelatine-like substance, and used as a binding or thickening agent.
